Pizza Rolls

 
This idea came to me a few years ago after making some cinnamon rolls for breakfast, but I was really wanting pizza... sooo the pizza roll came to mind!


Make a dough with flour (1/2 plain 1/2 self rise) mix in seasonings like salt, pepper, herbs then cut in 2 spoons of butter. Add enough milk to make the dough come together and roll flat. Spread your pizza sauce and top with cheese, just like you were making a flat pizza! Roll the pizza into a log and cut into circles. Bake for about 15 mins.
Enter into his gates with thanksgiving, and into his courts with praise: be thankful unto him, and bless his name. Psalm 100:4

Amazing 1 Pot Rice

 

This is an easy one pot dish that I think might be one of my favorites, even though I am not a huge fan of rice!
Pour into a large pot 1 can of tomato sauce and then fill that can with rice and pour in what will  and fill the can with water (2 times) adding them both to the pot (this also helps get all the rice that gets stuck to the can)  bring to a slow boil then turn the heat down and simmer for about 15-20 mins. I like to add carrot and onion to this as well, and if I am adding them in I will do so when I pour in the water. Stir occasionally and keep covered. After 15-20 mins I add in about 4-5 heaped spoon fulls of ricotta cheese and stir it all around then I top (while still in the pot) with shredded cheese, cover, and let sit till we are ready to eat it (5-15 mins later) The cheese is all melted and it is very, amazing! I served this with cheddar cheesy biscuits.

Dumplings

This is what was for dinner tonight! I always make a big pot of this when I do make it, it will be eaten! 2 cans cream of chicken soup, 1 can water, 1 potato (cut into bite sized pieces). Now depends who I am making this for but it it is just up to me I like to add onion, carrots, peas, corn and green beans. When I make it for my husband, like tonight, I get around this by making it with no veg other than potato, and then adding the veg into my plate when i serve mine (like in the photo) For my husbands I add chopped chicken on top.
For the dumplings, just add little over 1/2 c of flour, season how you like, then add enough milk or water to make a very sticky gooey dough. Drop this dough in round spoonfuls into the pot, bring to a boil then turn down then head and simmer, covered, for about 30 mins.

Brownie Cake

So kind of made this up as I went. Let me see what I can remember.
Self rise flour 1c,  1/2c sugar, butter, 3 spoons of cocoa, about a handfull of chocolate chips, 2 eggs, 1/2 spoon vanilla, 1/4c oil. Mix, if dry add a drop of water, but only a little. Bake about 20 mins. This turned out better than I thought.

Cinnamon rolls

These are great to make! I like them straight out of the oven, but you can also make an icing to drizzle over top, if you want them sweeter. I make the dough with half plain flour and half self rise flour, to it I add 1/2 sugar and 2 spoons of butter (can use non-dairy butter to make this vegan). After I mix that in I add enough milk (or water) to make a dough. Roll the dough out and spread a thin layer of butter so the toppings will stick. Sprinkle on cinnamon, sugar and brown sugar, roll into a log and cut into circles. Bake for about 15 mins.

Potato Pot Pie

So here is a twist on chicken pot pie, which I have been craving for a few days! You could make this the traditional way by topping the filling with a ready-made pie crust, but this was a nice twist that I really enjoyed!
I used a large baking tray instead of a pie dish so I could have more. Par boil 3 large potatoes (about 7 mins) then I put in half of a chopped onion and my veg of carrots, peas and corn and let boil another 5 mins or so. Meanwhile I mixed about 2 cups of self rise flour and seasoned with salt and pepper then cut in 1 large heaped table spoon of butter. I then added enough milk to make a very sticky, loose dough. If you hold the dough up it should fall apart because of how wet it is. (sorry no measurements because the milk went in a bit faster than I had planned, BUT I think this made it extra yummy, to me) Pour the potato and veg into the baking dish and top with a can of cream of chicken soup (or cream of celery for the veterinarians) now spread out the wet dough in little biscuit sized shapes to cover the dish. Cook at 215C for about 25-30 mins till the biscuit/dumpling dough is cooked.

Lemon Muffins

I made a extra this morning, we will see how long they last.  Mix 1/2 cup flour, 1 and 1/2 cup self rise flour, 1 cup sugar and 5 table spoons of butter. Add in the zest and juice of 2 lemons and 2 eggs with 1/2 cup water (more if needed) Mix until smooth, spoon into your muffin tray and bake at 200C for 12-15 mins. Now the part that makes these the best, right out of the oven pour a spoon of lemon juice over the muffin and sprinkle with sugar! Amazing!
Because I made extra, I had extra muffin mix, so I put it in a small cake dish and just cooked it twice as long as the muffins.
