Potato Salad

 Boil your washed and cut potatoes about 7 mins till tender but not soft as you would to make a mashed potato. Drain, cool, add chopped onion. Mix in the juice from 1 lemon into enough mayonnaise to lightly coat the potatoes. Done, easy potato salad!

Lemon pie

Love this pie so much and it's so easy! I first made the butter short bread crust by mixing a cup of flour with ¼ cup sugar and 3 to 4 table spoons of butter. Mix till it forms a dough. Spread into your pie dish then stick in the oven (200°C) while you mix the pie filling. For the filling mix a can of condensed milk with the zest and juice from two lemons and two eggs. Pour into crust and bake 20 mins, then cover and bake about 20 more mins. till set.

Layered Pizza

Something that I love is pizza! This is an easy dish that you can fill with your favorite pizza toppings! I made a veg one tonight.
First you make your flat pizzas by mixing a cup of flour and a packet of instant soup (any flavor) I used cream of chicken. Mix in a little less than 1/2 cup of water until you have a nice dough that feels, to me, like play dough. Split the dough into 4 balls and roll out big enough to fit in your round baking dish. Heat a frying pan and set on med high. Cook the flat pizzas for 1-2 mins on each side. Now layer the flat pizza first, then your sauce (I use plain tomato sauce or a cheese sauce I like to make) then add your toppings. Tonight it is carrots, onions, green and yellow peppers. Top this with cheese and then do it again starting with another flat pizza then sauce, toppings and cheese, do this till you have your last flat pizza, put it on top and top it only with cheese. Bake for 10-15 mins at 245C.

Choc Drop Oatmeal Bake

You know what I have not cooked with in a long time, chocolate. So we picked up some chocolate drops at the store the other day and now it is time for Choc Drop Oatmeal Bake!
Take a half cup self rise flour and mix with a half cup of cooking oats. Add to that 3 spoons of sugar and 3 spoons of honey, 1 egg, a splash of vanilla and a hand full of chocolate drops. You could also add in 1 mashed banana at this time if you wanted, you just might have to add a bit less milk so it is not to runny. Mix together with a half cup of milk and bake at 200C for 23-35mins. I like to serve this with a drizzle of honey.

Notes to myself

Ok, yes going to 'talk to myself' right now... I just had a brain wave of food ideas for the cook book and I do not want to forget them. If I write them down I will lose the paper! My daughter is excited about the book too and has said she wants to write her own book of desserts! Sounds good to me!
 Taco Bake, Cinnamon Rolls, Chicken Dumplings, Rice Box, Banana Bread, Pizza, Baked Mac N Cheese, Fried Rice, Fruit Crumble.
This is the day which Yahweh hath made; we will rejoice and be glad in it. Psalm 118:24


Pasta salad


Pasta salad is wonderful for a shabbath. Fast, easy and you can pop it in the fridge and have it when ever you want. Pretty basic, make your pasta then set aside to cool. I chop up; carrots, onion, bell peppers, and whatever else you want to toss in. Mix it all together with a salad dressing or I like to use a tartare sauce. (mayonnaise, lemon juice, onion and salt/pepper.)  If you have to have meat with your meal, you can easily add shredded chicken into this salad.  Nice and light and a hit with my daughter who went back for seconds!
