Gnocchi

Love these yummy little things and they couldn't be any easier to put together. All you do is boil some potatoes as you would to make mash potatoes, well because that is what you need to make! After you have made your mashed potatoes the way you like them, slowly add in a little flour, enough to make a nice smooth dough, slightly to the sticky side but not too wet. This is your gnocchi dough! Roll out little snakes logs of the dough and cut into little gnocchi 2" pillow as you see in the first photo.
Yes, I took photos for 2 reasons. #1 my husband was cooking these tonight and #2 a wonderful friend reminded me to get in there and take photos!


Now there are two ways to cook them from here. First you have to boil them in water to cook them, just like fresh pasta, let it boil till it floats to the top, about 3-5 mins. Now you can stop right here, top with your favorite sauce and enjoy, or you can do what my husband does and it makes it so yummy! Heat up a non-stick frying pan with a big blob of butter and fry them for just a minuet or two on each side. (they will stick if you have less flour in, so be sure you watch it and add more butter, oh ya!) Very nice and perfect for me this way, by my husband likes to take it one step more and add some beef mince and grated Parmesan cheese.
